Hello, friends! I’m excited today to be posting on The Blended Blog for Tasty Tuesdays. Yep, I’m like the rest of you I love food and I love to eat. Recently, I have discovered that many of the things I love to eat are not good for my digestive system. That rebellious gut just does not like grains or dairy anymore. What can I say? Welcome to life in my 50’s.
This was a little bit of a problem for me in the beginning because I love bread and anything that has a grain. Then one day as I was lamenting my fate I went to Pinterest to look for grain free recipes. My goodness! I found muffins! My world shifted. I’ve tried a few recipes and some were not successful but the one I’m sharing today is a fave of mine already.
It all starts with these ingredients. I try to keep a good amount of organics on hand but if I don’t have organic I’ll use what I have in the pantry.

And oh no! I got so excited to pop them in the oven I missed taking more pictures. The recipe made these nine muffins. I’ve made the recipe enough now that I can make a batch and half or a double batch. Double batch seems the best bet because they are delicious!
Ingredients

- 1 cup almond flour
- 1 1/2 tsp coconut flour
- 1/4 tsp salt
- 1/4 tsp baking soda
- 1/2 tsp cinnamon
- 2 eggs
- 2 tbsp pure maple syrup
- 1 tsp vanilla extract
- 1/3 cup unsweetened apple sauce
- Crumb Topping
- 1/4 cup coconut sugar
- 1 1/2 tbsp softened grass-fed butter
- 1 tbsp blanched almond flour
- 1 1/2 tsp cinnamon
- pinch of Pink Himalayan sea salt
Instructions
- Instructions:
- 1. Preheat oven to 350
- 2. Combine dry ingredients in a separate bowl
- 3. Add wet ingredients and pour into muffin tins with liners
- 4. Mix topping ingredients until in chunks
- 5. Top muffins with the topping
- 6. Bake for 15-20 minutes until a toothpick comes out clean
And YUM! It’s that simple. You can do it! Give grain free a try because these are that good that you won’t even miss the conventional flour.
